something to keep you awake on long summer afternoons

Do you find yourself wanting to lay down and take a nap in the middle of the afternoon? I say go for it! If you can’t do that, here’s a little something to keep you going.

We’ve really enjoyed these icy-cold coffee drinks this summer. Thank you to Alice at Savory Sweet Life for sharing this recipe with us. These have helped keep us energized through these long summer afternoons.

Things are busy here at PortlandPeeps. Lots going on, lots to tell, no time to tell. I promise you several long posts will occur later this month.

Mocha Frappuccino
(Alice’s version of a Starbucks favorite)

Ingredients:
1.5 cups of crushed iced
3/4 cup of milk
2-1 ounce shots (2 ounces total) espresso *read below using coffee as a substitute
1 Tablespoon of sugar (more or less depending on preference)
2 Tablespoons chocolate syrup

*optional whipped cream in a can or freshly made and chocolate syrup

*If you don’t have an espresso machine, use 3/4 cup of double strength (strong) coffee mixed with 1/2 cup of milk and increased crushed iced amount by 1/4 cup.

Directions:
Blend all the ingredients except the whipped cream in a blender for 45 seconds. Pour into a tall glass and top off with whipped cream and garnish with chocolate syrup.

This seemed to expand in the blender, and made enough for two.

Looks yummy! I've been drinking iced coffee over crushed ice all summer and then crunching the soft ice. Not as fancy as the frappucino, but a lot less equipment to clean. It works with skim milk and I use stevia sweetener to cut down on calories. It's definitely a nice little afternoon pick-me-up.

Susan, that sounds good too... and easy. Dirty dishes seem to have gathered permanently in our sink this summer with everyone eating at different times. At the end of the day there are 20+ glasses on the counter. Has anyone ever heard of reusing a glass? Yikes!
